We would like to introduce you to our resident physiotherapist Simon Macaulay.
Simon will be kicking all of your physio goals at Vitality after joining us from the AFL, where he worked in various senior physiotherapy roles. Get to know him better below.
We also have a nourishing savoury oat recipe for you to try, created by our nutritionist Jabeen.

Meet our physiotherapist
Simon is a qualified physiotherapist with over 40 years of experience in the health and fitness industry.
He spent 17 years working at the AFL as the senior team physiotherapist for the Western Bulldogs and was a physiotherapist for Australia’s International Rules Series team.
Simon has a personalised and holistic approach to physiotherapy. All clients receive a 45-minute consultation, starting with a thorough assessment of the individual’s needs, not just limited to the referred physical problem or injury.
Simon’s sensitivity and awareness to any potential contributing factors are noted, respected and discussed.
With a background in teaching, Simon aims to keep his patients informed of their injury diagnosis, empowering them with practical strategies to assist with their recovery.
This may include home rehabilitation, general fitness exercises, postural self-awareness and correction, core strength and mobility, healthy eating plans (to assist with weight control) and good mental health practices.
You will find Simon at the clinic on Tuesdays and Thursdays.
Enjoy your oats with a tasty twist

You know we love our bone broth at Vitality, which is why we have to share our resident nutritionist Jabeen’s savoury oat recipe.
Â
This bone broth-infused porridge is packed with protein, essential fats and carbohydrates and makes for a nourishing (and warming) meal!

Ingredients:
Â
50 grams of rolled oats
2 eggs
1 tbsp of Best Of The Bone bone broth
Vegetables of your choice (Jabeen recommends spinach and oyster mushrooms)
2 eggs
1 tbsp of sunflower seeds
Crumbled Brazil nuts
Salt and pepper
20 grams of Parmesan cheese (for topping)

Method:
Â
1. Bring a cup of water to the boil
Â
2. Mix 1 tbsp of bone broth into the water
Â
3. Add in the oats and vegetables
Â
4. Gently stir until you reach your preferred consistency
Â
5. In a separate pan, poach or pan-fry two eggs
Â
6. Pour the oats into your favourite bowl
Â
7. Sprinkle sunflower seeds and Brazil nuts over the oat mix
Â
8. Place the eggs on top
Â
9. Season with salt and pepper, add any other desired garnishes
